Flavor Notes:

Every facet of this bourbon is enveloped in freshly scraped vanilla bean. The nose is minty fresh and woodsy, yet maintains a foundational cereal note of cinnamon raisin bagel. On the palate, experience a sweet, oily mouthfeel complemented by notes of demerara rum and apple pie spice. Adding water unveils rich chocolate and coconut, revealing a complex earthiness in the aroma.

Tasting Profile:

Neat

Appearance: Maroon, with tones ranging from rust to baker’s chocolate.

Nose: Pungent vanilla bean emerges first, woven with goldenrod as you approach the glass. The aroma evolves from dark brown sugar to woodsy sugarcane, preserving the original grain character. Advanced aging introduces notes of tres leches cake, granola, and macadamia nut, with herbal hints of sage, tonka bean, and menthol, rounded out by plump raisins and fig newtons.

Palate: Enjoy the balance of biscuit-y and sweet flavors with s’mores, amaretti, and oatmeal raisin cookie. A spiciness unfolds with notes of crystallized ginger, peppermint, and black peppercorn, while oak tannins provide a rich, chewy body. The palate features a humus layer of gentian root, sesame seeds, and apple peels.

Finish: Fresh ginger, fennel seed, and cardamom rush through the exhale, leaving a pronounced bitterness reminiscent of cocoa powder and grapefruit peel. Gradually, a gentle sweet vermouth takes over, later joined by a grainy signature of skillet cornbread.
