Each ensamble represents a unique blend of agave varietals that will never be replicated. These field blends were common historically as mezcaleros drew from the few ripe, rarer varietals which time, season and availability allowed. Emigdio blends wild and cultivated agave, applies a stone grind via tahona before fermentation and distillation. Each ensamble is a unique batch, but typically will deliver tropical notes of honey, roasted plantain, pineapple and banana, as well as more earthy, mineral notes such as granite & salt ait.
