Caol Ila Distillery is the powerhouse of whisky-making on the Isles of Islay. We tamed its vibrant, peated spirit by filling it into opulent oak casks, previously used to mature rich, fruity Cognac.
TASTING NOTES
Nose: Coastel, crisp apple, charred oak
Palate: Beach bonfire, oily citrus, ginger
Finish: Leathery, lingering salted caramel.
The slow-grown French oak, with its refined, silky tannins, has added sophistication to this Islay malt’s peated style and after three years in a Cognac cask, the results are magnifique.
