The Shinobu Distillery is situated just a few hundred meters from the Japanese sea of Niigata, where there is a large amount of snowfall and strong sea breezes during the winter months due to the influence of the Siberian cold current. Niigata is renowned for its abundance of soft and clear water and is often referred to as the land of the “three whites” - snow, rice, and sake. The Master Distiller, Usami Ken, has applied artisan beer methodologies that he has accumulated over the course of more than 30 years, particularly in the areas of mashing and fermentation. Fermentation takes approximately six days on average, resulting in a new make that has a clear and solid body of unparalleled aroma. This Shinobu single malt Newborn is blended by hand with new make that has been aged in Mizunara and 1st fill bourbon casks for more than a year.
